Involved in the modulation of the chemotaxis system; catalyzes the demethylation of specific methylglutamate residues introduced into the chemoreceptors (methyl-accepting chemotaxis proteins) by CheR.By similarity
Required for optimal chemotaxis, this protein is able to restore chemotaxis to a completely non-chemotactic CheB1 mutant to near wild-type levels.

Protein L-glutamate O5-methyl ester + H2O = protein L-glutamate + methanol.
